Our Story
Spotted Rabbit Bakeshop is a small cottage bakery located in Pewaukee, WI. We specialize in custom pastries and cakes using fresh, local ingredients and everything is made from scratch. You can find us at the Delafield Night Market every Wednesday during the Summer and we will also be looking at expanding to more markets and events soon. With all of that being said I should introduce myself. My name is Annelise Linton and I'm the owner of Spotted Rabbit Bakeshop. My pastry career started in 2009 at Johnson & Wales University in Miami. I received my Associates Degree in Baking and Pastry Arts and then went on to Providence, Rhode Island to receive my Bachelor's Degree with a minor in Entrepreneurship. After graduating I worked in several of the top restaurants and bakeries in Milwaukee where I've honed my skills in classic and modern pastry techniques. When the pandemic hit in 2020 I decided to start Spotted Rabbit Bakeshop .
Over the past two years, I've slowly been expanding my business while also working a full time job as Pastry Chef of Belfre Kitchen in Delafield. This small cottage bakery has given me such joy and continues to allow me the opportunity to learn new techniques and meet some wonderful new people. I can't wait to bake for you and your loved ones and share my passion for sweets with you!
